Salmon Soup

what you need
  • 1 can pink salmon
  • 6 cups milk
  • 1/2 Tbsp. freeze dried chives
  • 1 small onion chopped
  • 1/2 Tbsp. dried parsley
  • 4 Tbsp. margarine or butter
  • Salt and pepper to taste
make it
1. Take out bones and remove skin. There will be a streak of dark meat down the sides, remove it too. Some people like to leave the soft bones in, it's your choice.

2. Put milk in pan, add chives, onions, parsley and butter; bring to scalding temperature. Add salmon and salmon juice. Add salt and pepper to taste.

3. Turn off burner and let set in hot milk for 5 minutes (salmon is already done so you’re just heating it through). Serve with saltine crackers.
Notes
I had 2 grandmothers, both married to farmers and could they cook. They never set a table that was not made from the heart.

This recipe is over 70 years old and belonged to my grandmother on my dad's side.
