Sauerkraut Salad

what you need
  • 1 large JAR sauerkraut, rinsed and drained
  • 3/4 cup sugar
  • 1/4 cup oil (canola or vegetable)
  • 1/4 cup white vinegar
  • 1/4 teaspoon celery seed
  • 1/2 cup onion, finely chopped
  • 1/4 cup green pepper, finely chopped
  • Pimentos for color
make it
Mix all ingredients together well.

Refrigerate at least 2 hours. Best refrigerated overnight.
It's easy to double.

I use this instead of potato salad. It has a mild flavor and is colorful. It's great to take to potluck dinners, picnics, etc. My family loves it with fried chicken!

Rated  by wxwidow on 8/20/2008 I love this salad! I've been making it for years...better than cole slaw, lasts a long time in your fridge and I love the look on peoples face when they inquire and I tell them it's sour krout!
