what you need
- Canola oil (or preferred oil)
- 2 pkg. Polish Kielbasa or smoked sausage, sliced to preference
- 1 pkg. salad shrimp (optional)
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 can diced tomatoes with chili peppers
- 1 large can tomato sauce
- 1 large tomato, diced or chopped, or 1 can diced tomatoes
- 1 tsp. crushed garlic or 1 tsp. minced garlic for seasoning
- Cayenne pepper (measure to preference)
- Salt
- Black pepper
- White rice (measured to preference)

Sautee sausage, salad shrimp (optional), onion, and green bell pepper in a skillet brushed with oil, approximately 5 - 10 minutes.
At the same time, heat tomatoes, garlic, and cayenne pepper to simmer in large pot over medium heat. Add in sauteed sausage mixture. Add in salt and pepper to preference (not too much salt-the tomato base already has a salty flavor). Cover with lid and simmer over low-medium heat for 20 minutes.
At the same time, cook the white rice and set aside. Serve finished sausage sauce over rice and salt and pepper to taste.
Notes
This recipe is quick and easy. Prep time is only about 10 minutes. Spice to preference-cayenne can be left out if it is too spicy. I use cayenne when my kids aren't eating this dish.
