what you need
- 1 tsp. olive oil
- 1.5 lb. ground Italian sausage (sweet, hot, or both) -- links are fine, just remove from casing
- 2 Tbsp. balsamic vinegar
- 2 cups chopped peppers (red, green, orange, yellow) -- whatever you have on hand will work just fine
- 2 medium onions, chopped
- 2 garlic cloves, chopped
- 1 can chicken broth
- 1 can (15 oz.) diced fire roasted tomatoes
- 1 tsp. dry basil
- 1 tsp. dry parsley
- Bread and Kraft Singles for grilled cheese sandwiches

In a large deep skillet, heat olive oil. Brown sausage meat for about 10 minutes.
Once browned, stir in balsamic vinegar, peppers, onions, & garlic, & saute for about 5 min.
Stir in chicken broth, fire roasted tomatoes, basil and parsley. Simmer for 10 minutes. Serve with grilled cheese sandwiches or sandwich of your preference.
Notes
I used 1 lb. sweet Italian sausage and .5 lb. hot Italian sausage. I served leftovers with cooked cheese & spinach tortellini.
