Seafood Tacos

what you need
  • 1 lb. white fish, such as cod or tilapia
  • 1/2 cup medium salsa, divided
  • 8 taco shells
  • 1 can (15 oz.) black beans
  • 1/2 cup no salt added canned corn
  • 1 1/2 cups salad greens
  • 1 cup shredded cheddar cheese

Preheat oven to 450. Place fish in shallow baking pan and top with 1/4 cup of salsa. Bake uncovered for 10 minutes or until fish flakes easily.

Wrap taco shells in foil and place in oven for last 5 minutes, if desired. Rinse and drain beans. Add corn and remaining salsa.

Divide greens among taco shells. Top with black bean mixture, fish, and cheese.
