Shara's Favorite Triple-Cheese Stuffed Mushrooms

what you need
  • 48 medium to large white mushrooms
  • 1 pkg. (10 oz.) frozen chopped spinach, thawed
  • 4 oz. reduced-fat feta cheese crumbled
  • 2 oz. Philadelphia Light Cream Cheese, softened
  • 1/2 cup finely chopped green onions
  • Salt to taste
  • 1/2 cup Kraft Grated Parmesan Cheese

Preheat oven to 350°F. With a damp paper towel, wipe mushroom caps clean. Remove and discard stems. Squeeze liquid from spinach until dry.

In large bowl, mix spinach, feta cheese, cream cheese, green onions and 1/4 tsp. salt until well combined. Fill each mushroom with heaping tsp. spinach mix, top with parmesan cheese.

Spray a jelly-roll pan with cooking spray. Transfer mushrooms to pan, bake 20 min or until mushrooms are tender and filling is golden brown.
Notes
My daughter swears these are the best stuffed mushrooms ever.
