what you need
  • Filling:
  • 3/4 cup sugar
  • 1/4 cup cocoa
  • 1/4 cup flour
  • Pinch salt (optional)
  • 3 cups whole milk
  • 3 egg yolks (save whites for topping)
  • 1 1/4 teaspoon vanilla
  • 1 9-inch pie shell (bake according to package)
  • Topping:
  • 3 egg whites
  • 1/4 cup sugar
make it
Mix first four filling ingredients together. Stir in milk and egg yolks. Cook in microwave until thick (5-10 minutes depending on your microwave, some may need to cook longer. Add vanilla and stir.

Place in 9-inch baked pie shell. Refrigerate until firm (3 1/2 to 4 hours), or you may refrigerate overnight if you prefer.

Remove from refrigerator and let sit at room temperature for a few minutes. Prepare topping: beat whites until firm with electric mixer and add sugar. Top pie with egg white topping and bake in oven on broil until brown. Enjoy.
