Sherry's Chicken with Zesty Tomato Sauce

what you need
  • 4 large chicken breasts, skinned, bone-in
  • 2 Tbsp. canola oil, divided
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup sliced fresh mushrooms
  • 1/2 cup chopped green pepper
  • 2 cups canned, diced tomatoes with juice
  • 3 oz. (1/2 of 6 oz. can) tomato paste
  • 1-1/2 cups fat-free chicken broth
  • 1 tsp. dried basil leaves
  • Black pepper to taste
  • 1/2 cup chopped fresh parsley

Gently brown chicken in 1 Tbsp. oil. Remove.

Add remaining oil, saute onion and garlic for 5 min. Add mushrooms, cook for 4 min. Stir in green peppers, tomatoes, tomato paste, chicken broth, basil and black pepper. Cover, simmer for 20 min.

Add chicken. Cover, simmer gently for 25 min, or until chicken is cooked through. Serve sprinkled generously with parsley.
This chicken comes out so tender and flavorful, and the sauce is so zesty and plentiful, you'll need lots of crusty Italian bread to sop it up.
