Sherry's Lemon-Herb Roast Turkey Breast

what you need
- 1/2 cup Italian-seasoned bread crumbs
- 1/4 cup butter, room temp
- 2 scallions, chopped
- 1/4 cup chopped fresh parsley
- 3 Tbsp. chopped fresh sage
- 1 tsp. grated lemon zest
- 3-4 lb. whole, boneless turkey breast
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 cup apple juice
- 1/2 cup apple jelly
- 1 jar (12 oz.) roasted turkey gravy

Preheat oven to 375°F. In bowl, combine first 6 ingredients.
Place turkey, skin side down on surface, cover with plastic wrap, use mallet to pound turkey to 3/4" thickness. Remove wrap. Sprinkle with salt and pepper. Spread with bread crumb mix to within 1/2" of edge. Starting from long side, roll up and tie. Place in roasting pan. Sprinkle with salt. Roast for about 1 hr and 15 min.
In small pot, cook apple juice and apple jelly over med-high heat until thickened. Cool. Brush over turkey the last 10 min of roasting. Transfer turkey to platter. Skim fat from juices in pan, set pan over 2 burners over med heat. Stir in gravy. Cook, stirring until slightly thickened, 5-10 min, serve with turkey.
