Skillet Beef with Lentils

what you need
- 1 1/2 cups lentils
- 2 Tbsp. margarine
- 2 medium onions, chopped
- 1 clove garlic, minced
- 1 lb. extra lean ground beef
- 2 beef bouillon cubes
- 2 Tbsp. long grain rice
- 1 tsp. sugar
- 1 tsp. salt
- 1 tsp. ground cumin
- 1/2 tsp. pepper
- 1 Tbsp. cider vinegar
- Parsley flakes

Bring one quart water to boil in saucepan. Add lentils, cook 20 minutes. Drain, reserving liquid. Keep lentils aside.
In a deep skillet saute: margarine, onions and garlic. Stir in 1 lb. extra lean ground beef, brown well. Dissolve bouillon cubes in reserved liquid and add to meat mixture, cover and simmer 10 minutes.
Stir in: reserved lentils, rice, sugar, salt cumin and pepper. Bring to a boil, reduce heat, cover, and simmer 30 minutes or until lentils and rice are tender and liquid is absorbed (add more liquid if necessary). Check seasonings. Stir in cider vinegar and top with parsley.
