- 1 package pork for stew
- Salt and pepper
- 1 package celery
- 4-5 red potatoes
- 1 package baby carrots
- 1 large can diced tomatoes
- 2 Tbsp. Italian seasoning
- 1 tsp. chili powder
- 1 Tbsp. oregano
make it
I turn the slow cooker on high and add 1/2 cup of water. Then add the pork with salt and pepper to give the meat some flavor.
Meanwhile, dice up the celery and potatoes, then add them to the pot. I do not skin the potatoes, just cut into cubes and throw them in along with the carrots. Then add the diced tomatoes.
I usually start adding the seasonings about 1 hour after it starts and then about 1 hour before it ends. Make sure the liquid covers the vegetables. If it doesn't, then just add water or a can of tomato sauce. You can tell when it's ready when the vegetables are tender (about 5 hours).
Notes
Prep time is 20 minutes or less.
I use a slow cooker liner so it's easy for clean up when you're finished. This is a very simple meal to make and usually lasts 3 days in my home. It has a nice Italian flavor.
