what you need
- 1 lg. beef tenderloin roast, fat trimmed off
- 2 Tbsp. minced garlic
- Salt and pepper to taste
- 1 cup water
- 1 bag (5 lb.) red potatoes, quartered and skin left on
- 1 med. sized bag baby carrots
make it
Place beef roast in crock-pot or slow cooker, turn on high, and rub the 2 Tbsp. of garlic on the outside of roast. Season to taste with salt and pepper.
Let cook for about six hours.
Add 1 cup of water, all the quartered potatoes, and bag of carrots. Let cook til pot roast, carrots, and potatoes are tender.
Notes
Prep time about 20 to 30 minutes. Cooking time will vary, depending on whether meat is frozen or thawed, and size of meat.
