what you need
- 6 hard-cooked eggs, halved lengthwise
- 3 tablespoons cream cheese, softened
- 1 tablespoon sour cream or plain yogurt
- 1/8 to 1/4 teaspoon salt and pepper
- 1/4 cup minced smoked salmon, plus 12 (1/2 inch) pieces for garnish
- 1 tablespoon chopped red onion
- 1 tablespoon drained capers
- 1 teaspoon snipped chives for garnish
make it
Cut eggs in half lengthwise. Remove yolks; place in small bowl and mash with a fork.
Add cream cheese, sour cream or yogurt, salt and pepper to taste and mix until smooth. Stir in 1/4 cup salmon, onion and capers.
Mound mixture into egg white halves. Top with a small piece of salmon for garnish and sprinkle with chives.
