what you need
  • 1 lb. hamburger
  • 1 small onion, diced
  • 1 small clove garlic, diced
  • 1 lb. package smoked sausage
  • 1 can (8 oz.) red or black beans, drained
  • 1 can (8 oz.) whole kernel corn (optional)
  • 1 envelope Taco Bell Chili or Taco Seasoning Mild
  • 1 can (8 oz.) diced tomatoes with juice
  • 1/2 cup Uncle Bens Brown Rice
  • 1 package Kraft Colby Jack Cheese Pieces
  • 1 package tortilla chips
  • 1 jar Taco Bell Salsa
make it
Brown hamburger, onion, garlic and sausage in a large frying pan. Add beans and corn; simmer together for about five minutes.

When the hamburger is brown, add the envelope of chili seasoning, and diced tomatoes with juice, taking place of water. Stir, cover and simmer on low for about 30 minutes. Cook rice separately.

After 30 minutes, add rice to the mixture and stir. Add cheese pieces, cover, turn off the burner, and let set for about 10 minutes. Serve with tortilla chips, or crackers, and plenty of salsa. Season to taste while cooking.
Notes
I have been making this dish for about 20 years. My kids loved it, so it got made a lot. It is simple, quick to fix, and very tasty and it is a versatile dish, that can be added to or subtracted from.

It has probably been used by others, but I invented this dish. When we were low on money, the kids were little, and I only had these ingredients in my cupboard, so I mixed them all together and came up with this. It is amazing what you can do, with next to nothing...
