Smoky Chicken-Apple Salad

what you need
  • 4 boneless skinless chicken breasts (can use already cooked, cubed variety)
  • 2 Tbsp. red wine vinegar
  • 1 packet Good Seasons Italian Dressing Mix (dry)
  • 1 Tbsp. Italian seasoning
  • Pepper, paprika, garlic to taste (I use about 1 Tbsp. of the 3 mixed)
  • Light mayo
  • A few dill pickle slices or relish (cut-up)
  • 1 apple, cored (can leave peel on)
  • 3 Tbsp. light cream cheese
  • Sliced carrots, celery, onion (optional)
make it
Season chicken breasts with red wine vinegar and both types of Italian seasoning. Cover, and refrigerate at least 1-1.5 hours.

Remove, and let chicken sit a little. Then you can either grill or pan-grill until juices run clear. Let cool about 10-15 minutes.

While waiting on chicken to cool enough for you to handle, mix remaining ingredients in bowl. Add cut up chicken and then mix gingerly. Refrigerate at least an hour to 1.5 hours. Can serve as a sandwich or dip.
