Southern Pecan-Banana Bread

Makes: 8-12 slices Total Time: 1 hr 15 min

what you need
  • 1 3/4 cups plain flour
  • 2/3 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 2-3 bananas, mashed (about 1 cup)
  • 1/3 cup margarine, softened
  • 2 Tbsp. milk
  • 2 eggs
  • 1/4 cup chopped pecans
make it
Preheat oven to 350 degrees. Combine 1 cup of flour and all remaining ingredients except nuts in large mixing bowl. Beat on low speed until blended, then 2 minutes on high speed. Add remaining flour and beat well. Stir in pecans.

Pour into greased loaf pan.

Bake 55-60 minutes, or until toothpick inserted one inch from side comes out clean. Allow to cool, then wrap with foil or plastic wrap.
Notes
This recipe doubles well, and is great for breakfast on the run.

Rated  by a cook on 12/23/2010 It tastes absolutely delicious - however, it completely fell apart. There doesn't seem to be enough moisture to hold it together.
