- 1/2 tsp. all-purpose flour
- 1/4 tsp. salt
- 1/8 tsp. cayenne pepper
- 3 oz. buttermilk
- 3/4 cups cornflake crumbs
- 1 lb. boneless skinless chicken breasts (4 pieces)

Preheat oven to 365 degrees. Combine flour, salt, and cayenne pepper in a medium bowl. Put buttermilk and cornflake crumbs in 2 separate shallow bowls. Roll chicken in flour mixture and evenly coat each piece. Dip chicken into buttermilk and then cornflake crumbs.
Place coated chicken breasts in 8 x 8-inch baking dish lightly coated with nonstick cooking spray.
Bake 20 minutes or until chicken is tender and no longer pink.
Notes
Coating chicken breasts in buttermilk keeps the fat content down in this family-favorite entree.
