Southwest Shrimp Pasta

what you need
  • 1 small brick Velveeta Cheese, cubed
  • 1 pound cooked pasta (spirals or penne works best)
  • 1 pound cooked shrimp, cut in pieces
  • 1 can Ro*Tel Diced Tomatoes and Green Chilies
make it
Cube Velveeta and melt in microwave.

At same time cook pasta in salted water and drain well. Also cook shrimp, rinse and peel. Cut in to bite size pieces.

Now combine all ingredients and serve. Absolutely delicious and guests will think you have slaved over hot stove for hours.
This recipe came about as an accident. Was at New Years Party and my friend made Velveeta cheese dip. I had brought the Shrimp for cocktails.
My friend asked me to try the dip and as no chips were open yet and I was working with the shrimp dipped the shrimp instead, Not only was that good but decided to add Pasta. I think if you wanted to rice could be substituted.

Very rich and enjoyable dish.
