what you need
  • 1 1/2 cups oil
  • 2 cups sugar
  • 4 eggs
  • 2 1/4 cups sifted flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 2 cups finely grated carrots
  • 2 tsp. vanilla
  • 2 cups flaked coconut
  • 1 cup chopped nuts
  • 8 oz. can crushed pineapple
  • Frosting
  • 1 pkg. (8 oz.) cream cheese
  • 1/2 cup butter or margarine
  • 1 box powdered sugar
  • 1 tsp. vanilla

Grease and prepare 3-9 inch layer pans. Preheat oven to 350.

Beat together oil and sugar; add eggs one at a time beating well after each addition. Sift together dry ingredients and add. Fold in remaining ingredients. Turn into pans. Bake at 350 for 50-60 minutes or till done.

To make frosting, blend cream cheese with butter. Slowly beat in sugar and vanilla until fluffy. Frost cool cake.
