Spice & Sweet Onion Meatloaf

what you need
  • 2 lb. ground lean beef
  • 2 pkg. saltine crackers
  • 1 cup Kraft Original Spicy Honey BBQ Sauce
  • 4 Tbsp. Ketchup
  • 1/3 cup diced onions
  • 3 Eggs
  • 1 Tbsp. Ground Pepper
  • Ketchup
make it
1. In Med- mixing bowl, combine ground beef and all the ingredients. Mix with big spoon, or hands, mix/mash well.

2. Lightly coat meatloaf pan with oil, then a fine covering of crushed saltines. Pour meat mix in pan and shape top nicely. Then decorate top with ketchup (optional).

3. Bake at 375'- 400' for 35 minutes. Slice warm and serve!
Notes
I'm a full-time employee and college student, and when I come home at night from work I'm usually always starving and really don't feel like consuming myself with fast foods or frozen pizzas every night.

So I finally gave up on the cupboard food as well (Top Ramen and Mac and Cheese) and decided to get smart and make my own quick meals.

This is an awesome dish and it goes great with cubed Garden Garlic Potatoes! It's so easy and quick, and the best part, it only cost me $5.00 total!!! Throw in a can of green beans and some fresh halved pears for a sweet side, and you got yourself an awesome meal!!

Rated  by albonn on 4/6/2005 One instruction that would result in more confident preparation is to clarify that "all the ingrediants" in step 1 includes half or none of the saltines since step2 specifies coating the meatloaf pan with a fine coating of crushed saltines. I guessed half ( 1 pkg.) in each step and it came out okay.
