Spicy Black Bean Chicken Taquitos!!

what you need
  • 3 large pieces boneless skinless chicken breasts, thawed
  • 1 bottle lemon pepper marinade
  • 16 oz. container fat-free sour cream
  • 1 small can chopped green chilies (or use fresh, if possible!)
  • 2 teaspoon chili powder
  • 1 can black beans, drained and rinsed
  • 1 bag corn tortillas
  • Serve with fresh guacamole and salsa

Preheat oven to 350 degrees F. Marinade chicken breasts, following instructions on bottle. Chop chicken breasts into cubes before grilling on the stove in a lightly greased skillet; grilling cubes until cooked through (170 degrees F). In a large bowl, combine cooked chicken cubes, sour cream, green chilies, chili powder, and black beans. Mix well!

Warm 12 corn tortillas in the microwave for 30-40 seconds. Lay one tortilla flat and spoon the mixture into the center of the tortilla, roll into a thick, cigar-shape and place in a greased 13x9 in. pan, repeat until mixture is gone. (May make more than 12.)

Spray the taquitos with Pam (or grease) before baking in the oven for 20-25 minutes, or until lightly browned and the tortillas are splitting apart on the top.
If the tortillas are splitting while you are stuffing them, they may not be warm enough or you may be stuffing them too heavily.
