Spicy Tomato Bean Soup

what you need
  • 1 carton roasted red pepper & tomato soup
  • 3/4 cup frozen corn
  • 1 can kidney/great northern/black beans, rinsed & drained
  • 1/3 cup chopped onion
  • 1/2 tsp. chili powder
  • 1/2 tsp. garlic powder
  • 1 cup medium pasta shells
  • 1 jalapeno pepper, diced
  • 2 medium tomatoes, diced
  • 1 1/2 cups water
make it
Combine all ingredients in large pot.

Bring to boil and simmer for 10 minutes. Don't overcook pasta, because it will continue to absorb water as it sits.

If using slow cooker, add pasta 10 minutes before serving.
Optional: Add browned ground turkey.

Sprinkle with shredded cheddar cheese before serving.
