Spicy Turkey Meatloaf

what you need
  • 1.4 lb. ground turkey
  • 2 stalks celery, minced
  • 1 carrot, minced
  • 1/2 onion, minced
  • 1/2 red bell pepper, finely chopped
  • 1 Tbsp. pepper sauce
  • 1 Tbsp. Dijon mustard
  • 1/2 Tbsp. garlic, minced
  • 1/3 cup cream of wheat cereal or 2 slices wheat bread, soaked in water
  • 1/4 tsp. dry basil
  • 1/4 tsp. dry thyme
  • 1 Tbsp. lemon juice
  • 2 egg whites or 1 egg
  • 1 tsp. salt
  • For sauce:
  • 3/4 cup ketchup
  • 2 tsp. honey
  • 2 tsp. lemon juice
  • 2 tsp. Worcestershire sauce
  • 1/2 tsp. chili powder - if more spice desired
make it
Preheat oven to 350F. Mince all vegetables together, in a chopper/food processor.

In a large bowl, combine vegetables, meat, spices and all other ingredients. Shape into a loaf.

Bake in a greased pan for 20 - 25 minutes. Meanwhile combine ingredients for sauce in a small bowl. Remove loaf from oven & brush with 2 Tbsp. of sauce. Bake for another 20 - 25 minutes. Let cool for 10 minutes before slicing.
