what you need
- 1 1/4 cups chopped dates
- 1 1/4 cups water
- 1 tsp. baking soda
- 1/4 cup unsalted butter
- 3/4 cup sugar
- 2 eggs
- 1 cup self-raising flour
- Butterscotch Sauce
- 1 1/2 cups brown sugar
- 1 cup chopped unsalted butter
- 1 1/4 cups thickened cream
make it
Grease bread pan. Combine dates and water in saucepan, bring to boil. Remove from heat, add baking soda; let stand for 5 minutes. Blend date mixture until smooth. Beat butter and sugar in small bowl with electric mixer until combined; beat in eggs one at a time; beat until combined. Gently whisk in sifted flour, then the date mixture. Pour mixture into greased pan.
Bake in 350 degrees F oven about 50 minutes. Stand cake 10 minutes before turning onto wire rack. Serve cake with warm butterscotch sauce.
Butterscotch Sauce: Combine all ingredients in pan. Stir over heat, without boiling, until sugar is dissolved. Simmer, stirring, 5 minutes. Do not microwave the sauce alone. You can microwave the cake topped with sauce, though.
