Strawberry Blueberry Cheese Crepes

what you need
  • Crepes
  • 1 1/2 cups milk
  • 2 eggs
  • 1 tsp. vanilla
  • 1 cup flour
  • 1/2 tsp. baking soda
  • Pinch of salt
  • Filling
  • 2 pkg. blueberries
  • 1 quart strawberries
  • 8 oz. soften cream cheese
  • 8 oz. sour cream
  • 1/3 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
make it
Whisk milk, eggs, and vanilla together. Slowly whisk in flour, baking soda and salt over med heat.

Pour 1/3 cup of batter on to frying pan and swirl batter around to coat bottom. When it looks like top is dry, flip crepe over. Should be just browning, don't brown, just cook so no longer moist, or it'll over cook later on. Makes about 9 crepes.

Preheat oven to 350°F. Clean berries and slice strawberries into slices. You can sprinkle with sugar, but not really needed. Set aside. Mix sour cream and cream cheese. Add sugar, eggs, and vanilla. Once blended, add berries.

Fill crepes on onside with about a cup of filling. Roll crepe up tucking edge around mixture. Bake in a dish of about 9x13 for about 1 hour. Crepes should now be golden brown.
