Stuffed Baby Portabella Mushrooms

what you need
  • 48 baby mushrooms
  • 1 cube butter
  • 1 pound sweet Italian sausage
  • 2 large cloves garlic
  • 1/2 cup seasoned bread crumbs
  • 1 pkg. frozen chopped spinach
  • 1/2 cup grated mozzarella cheese
  • 1/2 cup Kraft Parmesan Cheese
make it
Preheat oven to 350°F. Wipe mushrooms of all dirt, do not wash them -- they like to absorb the water. Take stems off and clean out the brown under the cap of the mushroom.

Add butter to the skillet, and melt slowly. Take the sausage out of the casing and add to the skillet along with the chopped garlic. When sausage is cooked, chop very finely. Add bread crumbs and let cool a bit. Now add the rest of the ingredients and mix well.

Fill the caps with the mixture, and sprinkle with parmesan cheese. Bake for about 10 to 12 minutes depending on the size of the mushrooms.
Notes
I was a business manager for a large hospital. The administrator would do these lunch and chat luncheons around in the community so the consumer could know a little more about us. These mushrooms were a big hit. In fact I usually got orders for them when we left. Please excuse any spellings errors. I have been sick and lost a lot of my memory. Thank you.
