Stuffed Pork Loin

what you need
  • 3 pound pork loin, butterflied
  • 2 slices prosciutto
  • 1/4 cup Asiago cheese
  • 1/3 cup dried tomato pesto
  • 1 cup spinach
  • Salt & pepper
  • Crust:
  • 1 cup bread crumbs
  • 2 Tbsp. Worcestershire sauce
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. fresh thyme chopped
  • 2 Tbsp. olive oil
  • Salt and pepper
make it
Lay out plastic wrap. Season loin with pepper. Lay prosciutto down center. Layer cheese, pesto, and spinach. Rollup and tie. Season with salt and pepper.

Mix crust ingredients. Pack crust around roast.

Bake at 350°F for 1 hour, or until internal temperature reaches 155 degrees F. Rest 15 minutes.

Rated  by Hemay on 1/19/2005 Very, very good recipie and extremely tasty! However, I had to cook it at 375 F for at least 1 1/2 hours though to get it cooked through. It still was juicy and tender. I loosely wrapped it in foil to bake. Yum!!! I fixed it for my parents and have printed the recipie out to keep. I can't wait to try it on my friends.
