Stuffed Shells with Spinach and Cheese

what you need
- 1 package Mueller's shells
- 1 large container ricotta cheese
- 8 oz. shredded mozzarella cheese
- 1 tsp. ground nutmeg
- Chopped parsley
- 1 package spinach
- 1 small package pine nuts (can sub walnuts, just use fewer, stronger taste)
- 1 tsp. salt and pepper
- Tomato sauce with garlic and onion
make it
Boil shells until soft. Mix ricotta cheese, mozzarella cheese, ground nutmeg, chopped parsley in large bowl. Blend spinach and pine nuts in food processor or blender. Add spinach and nuts to cheese mixture and stir.
Line bottom of baking dish with thin layer of tomato sauce. Fill shells with mixture and lay in a deep baking dish. Cover with tomato sauce.
Bake at 375°F for approx. 45 minutes.
Notes
Delicious, serve with fresh garlic bread and string beans, or other favorite vegetable.
