Summer Mozzarella Cucumber and Tomato Salad with Garden Herbs

what you need
- 30 cherry tomatoes (approx.)
- 1 tub or 20 mini fresh mozzarella balls
- 2 cucumbers, peeled & sliced
- 1/4 cup sun dried tomato
- 1 Vidalia onion or red onion- whatever you prefer
- 1/4 cup fresh parsley
- 1/4 cup fresh basil
- 1 Tbsp. thyme & oregano
- 1/4 cup vegetable oil
- 1/4 cup red wine vinegar
- A pinch of salt
- 1 Tbsp. fresh ground pepper

In a large bowl combine cherry tomatoes, fresh mozzarella, sliced cucumbers, chopped sun dried tomatoes, sliced onions, all chopped herbs, oil and vinegar and salt & pepper.
Let stand for at least an hour to let the vinegar infuse the cucumbers. That’s it!

This is a great side dish for a summer steak on the grill and its Low Carb too!
