Summer Mozzarella Cucumber and Tomato Salad with Garden Herbs

what you need
  • 30 cherry tomatoes (approx.)
  • 1 tub or 20 mini fresh mozzarella balls
  • 2 cucumbers, peeled & sliced
  • 1/4 cup sun dried tomato
  • 1 Vidalia onion or red onion- whatever you prefer
  • 1/4 cup fresh parsley
  • 1/4 cup fresh basil
  • 1 Tbsp. thyme & oregano
  • 1/4 cup vegetable oil
  • 1/4 cup red wine vinegar
  • A pinch of salt
  • 1 Tbsp. fresh ground pepper
make it
In a large bowl combine cherry tomatoes, fresh mozzarella, sliced cucumbers, chopped sun dried tomatoes, sliced onions, all chopped herbs, oil and vinegar and salt & pepper.

Let stand for at least an hour to let the vinegar infuse the cucumbers. That’s it!
Notes
This is a great side dish for a summer steak on the grill and its Low Carb too!
