Summer Veggie Strata

what you need
  • 2 small fresh zucchinis
  • 2 yellow squash
  • 1/2 lb. Italian flat beans
  • 1-2 carrots
  • 1 cup broccoli florets
  • 1 small onion
  • 1 sweet red bell pepper
  • Salt to taste
  • 1 package (8 oz.) Kraft Shredded Sharp Cheddar (or 8 oz. Kraft Cheddar Jack Cheese)
  • 1 package (8 oz.) Kraft Shredded Italian Blend Cheese, Kraft Pizza Cheese, or Kraft Mozzarella Cheese

Preheat oven to 425°F. Slice the zucchini and yellow squash into 1/4 in slices (cut in half if the slices are too big). Cut Italian beans into 1-inch lengths, slice carrot into thin slices, cut up onion into 1-inch strips, and cut red bell pepper into 1 inch strips. Steam all veggies together with just a little bit salt until fork tender, but still firm.

Here's the fun part! Drain veggies, and layer HALF of the veggies in a buttered (cooking sprayed) 9"x 9" oven safe glass dish or pan. Next, sprinkle the Kraft Cheddar Cheese over all the veggies. Add the rest of the veggies, and top with Kraft Mozzarella cheese.

Bake until bubbly and slightly golden brown. Serve hot with a nice crusty bread, and wait for the raving to begin!
Notes
This can also be made in individual casserole dishes. Get creative and add other veggies you may like. The idea is to have all the veggies about the same size, preferably large bite-size. Experiment with fresh herbs if you want, but with the flavor of the onion and sweet red pepper, you don't have to season at all. You can add diced chicken, but the Kraft cheese provides all the protein you need, so enjoy a Meatless Monday!
