Sweet Fluffy Cornbread

what you need
  • 2 boxes corn muffin mix
  • 1 box yellow cake mix
  • 5 eggs
  • 2/3 cup milk
  • 1 1/3 cup water
  • 1/2 cup butter, softened
make it
1. Preheat oven to 350 degrees F and mix all dry ingredients. Add remaining ingredients and mix well.

2. Pour into greased cupcake pans or mini loaf pans.

3. Bake 20 min or until golden brown on top and a toothpick inserted in the middle comes out clean. Allow to cool slightly in the pan (until pulls away from side a bit). Remove from pan serve warm.
You may also add a can of creamed corn. You can also use a 13 by 9 inch pan. 10 min prep and 20-30 min cooking time depending on what size pan you use.

Rated  by thoroughbred101 on 3/3/2011 Very good flavor and inexpensive to make. I used both Jiffy corn mix and cake mix and the bread still had a nice cornbread texture with a little added sweetness that was perfect with a spicy chili. I don't recommend using this for muffins, as they cooked too fast to allow ample rising time, but the recipe made six very nice mini-loaves.
