Sweet Potatoes Walnut Bread

what you need
  • 1 package (15 1/4 ounce) nut bread mix
  • 1 cup cooked, mashed sweet potatoes
  • 1 cup chopped walnuts
  • 1/2 cup apple juice
  • 1/4 cup oil
  • 1 egg, lightly beaten
  • 1/2 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 1/2 cup maple syrup

Preheat oven to 350°F. Line a 4 1/2-by 8 1/2-by-2-inch loaf pan with heavy duty foil. In a large bowl, sir together the nut bread mix, sweet potatoes, walnuts, apple juice, oil, egg, brown sugar, cinnamon and ground cloves. Mix well. Stir in maple syrup; mix well.

Spoon into loaf pan.

Bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean. Put loaf pan on wire rack to cool; about 25 minutes. Serve with jam or butter.
This loaf bread is good for anytime of the day. You can sprinkle powder sugar on top or top with fresh chopped fruits and whip cream.
