Taco Casserole Bake

what you need
  • 2 lb. lean ground beef
  • 2 packets cheesy taco seasoning
  • Milk (amount varies)
  • 1 can (4.25 oz.) chopped black olives
  • 1 can (16 oz.) fat free refried beans
  • 1 bag taco shredded cheese
  • 1 bag chili corn chips
  • 2 packs (6.5 oz. each) cornbread mix
  • 1 egg
  • 2 Tbsp. butter, melted
  • 8 oz. creamed corn
make it
Preheat oven to 400 degrees F. Grease 13x9 dish. Brown ground meat and add taco seasoning and milk as directed on package. Add black olives.

Spread refried beans on bottom of dish. Layer in this order: ground meat, shredded cheese, and corn chips. Mix in a separate bowl the cornbread mix, egg, butter, and milk as directed on package. Add creamed corn. Pour over corn chips.

Bake 16 to 18 minutes or until golden brown and toothpick comes out clean.
You can add additional ingredients to the ground meat, such as tomatoes, etc.

You can also substitute ground meat with veggie meat.
