what you need
- 3 Tbsp. lemon juice, divided
- Salt to taste
- 1/4 tsp. lemon pepper
- 1/4 tsp. garlic powder
- 1 lb. tilapia fish fillets, cut into 8 strips
- 2 large tomatoes, chopped
- 1 large avocado, chopped
- 1/2 of a medium onion, chopped
- 1/4 cup cilantro, chopped
- 2-3 eggs
- 2 pkt. SHAKE 'N BAKE Seasoned Coating Mix-Garlic and Herb
- 8 (1 pkt.) TACO BELL HOME ORIGINALS Flour Tortillas
- 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 1 lettuce, chopped

Preheat oven to 400°F. In a Ziploc bag add 1 Tbsp. lemon juice, salt, lemon pepper, and garlic powder. Place fillets in the bag and marinate for 10 minutes.
Meanwhile, in a medium bowl mix remaining lemon juice, tomato, avocado, onion and cilantro to make fresh salsa and set aside. In a small bowl, beat eggs lightly with a fork. Spread coating mix on a large plate. Take the marinated fish fillets and first dip them in the eggs bowl and then into the coating mix. Coat evenly.
Arrange on a baking sheet sprayed with cooking spray and bake 15 to 20 minutes. Meanwhile heat up tortillas. Place one fish fillet in tortilla. Spoon 2 Tbsp. of sour cream, 1/4 cup of fresh salsa and lettuce on top of fish and serve.
Notes
This is a new spin on tacos. It's a really simple and fresh recipe to make especially during those hot summer days. I'm not a big seafood fan but this recipe I do enjoy even though it has fish. Plus it's really healthy with all those veggies! My aunty gave my mother this recipe and well she gave it to me. It's a favorite in my house.
