Teriyaki Chicken

what you need
  • Wooden skewers
  • Juice of 1/2 lime
  • 2 tablespoons vegetable oil
  • 1 cup soy sauce
  • 4 tablespoons brown sugar or honey
  • 3 ginger root slices (size of a quarter), chopped
  • 2 tablespoons cilantro, chopped
  • 3 cloves garlic, chopped
  • 4 tablespoons saki, or dry white wine, or rice wine vinegar
  • 2 pounds chicken thighs (bones & skin removed), cut into 1" pieces
make it
Soak wooden skewers in cold water for a minimum of 30 minutes to prevent burning.

Mix all ingredients thoroughly (except chicken). Add chicken and marinate for 2-3 hours in refrigerator.

Thread chicken pieces onto skewers. Boil marinade to use for basting. Grill on BBQ (preferred method), basting frequently with marinade until chicken is done (approximately 15-20 minutes).

This recipe was given to me by my former brother-in-law almost 10 years ago, and I have been making it ever since!
