Teriyaki Salmon with Gingery Chard

what you need
  • 1-1/2 lbs. red, yellow, and/or orange Swiss chard, cut into 1 inch pieces
  • 3 Tbsp. teriyaki sauce
  • 2 Tbsp. green onion, thinly sliced
  • 2 Tbsp. fresh cilantro leaves, coarsely chopped
  • 4 (6 oz.) salmon fillets, 1 inch thick
  • 1 Tbsp. olive oil or canola oil
  • 2 garlic cloves, crushed
  • 1 tsp. fresh ginger, grated and peeled
  • 1/4 tsp. salt
  • 1/8 tsp. ground black pepper

1. Rinse chard and drain (do not spin dry). Set chard aside until ready to cook.

In a bowl, combine teriyaki sauce, green onion, and cilantro. Set aside.

2. Grease ridged grill pan and heat over medium-high heat until very hot, but not smoking. Add salmon, skin side down. Cook 5 minutes. Turn salmon over and cook for an additional 3 to 4 minutes, or until fish just turns opaque.

3. Meanwhile, in a nonstick 12-inch skillet, heat oil over medium-high heat. Add garlic and cook 1 minute, or until golden, stirring constantly. Add Swiss chard (in batches), ginger, salt, and pepper. Cook about 5 minutes, or until chard is tender, stirring frequently.

4. To serve, transfer salmon and chard to 4 dinner plates. Drizzle salmon with teriyaki mixture.
