what you need
- 1 box Spanish style rice
- 1 lb. ground beef or other meat preference
- 1/2 Tbsp. onion powder
- 1/2 Tbsp. garlic powder
- 1/2 Tbsp. chili powder
- 1 tsp. ground cumin
- Salt & pepper to taste
- 8-10 flour tortillas, halved
- 1 can mild red enchilada sauce + 2 Tbsp. water
- 1 can whole kernel corn, drained
- 2 1/2 cups Kraft 4 Cheese Mexican Shredded Cheese; divided 2 cups & 1/2 cup
- Chopped green onions for garnish

Cook rice according to directions. Brown meat and add seasonings. Preheat oven to 375.
Spray non-stick cooking spray on 13 x 9 pan. Place 1 layer of tortillas on bottom. Spoon sauce over tortillas, enough for light coating. Spoon all the rice on tortillas and spread flat. Repeat with meat and corn. Drizzle sauce over corn, sprinkle 1/2 cup cheese over corn. Layer remaining tortillas over cheese. Spoon remaining sauce over tortillas. Sprinkle 2 cups cheese over sauce.
Bake for 10-12 minutes or until cheese is melted. Garnish with chopped green onions.
Notes
For servings: cut once lengthwise and 4 x across to make 8 servings. Serve hot!
