what you need
  • 8 Roma tomatoes (take out seeds)
  • 1 large white onion
  • 1 bunch scallions
  • 2 green bell peppers
  • 1 yellow bell pepper
  • 1 can (15 oz.) black beans
  • 2 cans (15 oz. each) black eye peas
  • 1 small can Shoepeg style corn
  • 1 bottle (8 oz.) fat free Italian dressing
  • Fresh cilantro to taste
make it
Wash all fresh veggies. Seed peppers and tomatoes. Drain and rinse beans, peas, and corn. Set aside.

Finely chop all fresh veggies so that no piece is much bigger than a piece of the shoepeg corn. Add beans, peas, and corn to chopped veggies. Mix all together with Italian dressing. Add cilantro to taste.

Serve as a dip with tortilla chips or mix with cold salad Rotini for great pasta salad.
This recipe makes a lot so use a LARGE bowl and come hungry.

I choose not to add heat because my family doesn't like heat, but friends to whom I have given this recipe, say that it is also good with a little jalapeno.

Best if refrigerated overnight, but it smells so good while you're making it, you won't be able to resist taste testing as soon as you've mixed it.

My co- workers badger me constantly to make this for office parties.

Rated  by Audrey_Garris on 1/1/2013 Love this recipe. I like color and sweetness of red bell peppers so I use one of them instead of the yellow peppers. I also use a can of tomato/peppers (like Rotel)on occasion. The Kraft Italian Dressing really makes the whole thing!
