Thai Pork Lettuce Wraps

what you need
  • 1 bag (3.5 ounce) Success White or brown rice
  • 1 lb. breakfast pork chops, cut into thin strips
  • 1 Tbsp. olive oil
  • 3/4 cup bottled Thai peanut sauce
  • 1 red bell pepper chopped
  • 3 green onion tops, chopped
  • 1/4 tsp. fresh ground pepper
  • 2 tbsp. chopped fresh cilantro
  • 6 large iceberg lettuce leaves
  • 1/2 cup dry-roasted peanuts, coursely chopped
make it
Prepare rice according to package directions.

Cook pork in oil 5-6 minutes or until done. Stir in peanut sauce, bell pepper, and green onions; cook, stirring contantly, until bubbling. Stir in hot rice. Remove from heat and add pepper and cilantro.

Spoon mixture into lettuce leaves and sprinkle with chopped peanuts. Serve immediately.
