Three Cheese Quesadillas

what you need
  • 2 small cloves garlic, unpeeled
  • 8 oz. Monterey Jack, coarsely grated (2 cups)
  • 1 1/2 oz. finely grated parmigiano reggiano (1/2 cup)
  • 4 oz. fresh goat cheese, crumbled (3/4 cup)
  • 2 Tbsp. salted butter, room temp.
  • 4 (9-10 inch) flour tortillas
make it
Mix garlic and cheeses.

Spread butter on tortillas. Distribute the cheese mixture among the tortillas, covering only half of each and leaving a 1-inch margin at the edge.

Cook in heated skillet until golden brown. Cut the quesadillas into small wedges and serve.
Notes
Does not take long for tortillas to get golden brown.
