Tilapia and Rice

what you need
  • 2 cups chicken broth
  • 1 cup water
  • 2 cups Minute Rice
  • 1 cup carrots, finely chopped
  • 1 cup zucchini, finely chopped
  • 1 cup red bell pepper, finely chopped
  • 1 cup corn
  • 4-6 tilapia frozen fillets
  • 1/2 cup of your favorite Kraft Vinaigrette Dressing
make it
Boil the broth and water together in a sauce pan. Then in an oven safe baking dish mix the Minute Rice with the boiling broth/water mixture.

Add the chopped vegetables and corn to baking dish, making sure to distribute the vegetables throughout the rice. Top the dish off with the fillets and 1/2 cup of dressing.

Bake uncovered in 450 degree oven for 20 min or until fish flakes easily with fork.
Notes
Can substitute red onion for the red bell pepper or mushrooms for the zucchini.
