Tina's Super Simple Fish Curry

what you need
  • 3 Tbsp. extra virgin olive oil (EVOO)
  • 2 tsp. ginger paste
  • 2 tsp. curry powder
  • 1 handful cilantro chopped
  • 1 pinch ground coriander (or 3 hail pods, cracked) OPTIONAL
  • 3 Tbsp. coconut milk powder (dissolved in 1 cup of water)
  • 4 fish fillets (white)
  • Salt to taste
make it
Heat oil in deep fry pan on medium-high heat. Add ginger paste. Cook until brown, about 2 min.

Add curry powder, cook until smell turns sweet, about 1 min.

Add cilantro, coriander, then add coconut milk and fish. Cook on low heat until fish is done. Serve with rice.
