To-dah-cupish-day (Tomato Cabbage Soup)

what you need
  • 1 large can tomato juice
  • Salt and pepper to taste
  • 1 lb. ground beef
  • 1 cup uncooked Minute Rice
  • 6 large potatoes, peeled and sliced in half length wise
  • 1 medium cabbage, cored and cut in quarters

Start by putting the tomato juice into your LARGE kettle. Add the salt and pepper and bring to a soft boil.

Now mix the ground beef and rice together. Drop into boiling juice and turn down to simmer.

After 30 minutes, add potatoes and cabbage. Cook to your own desired doneness.
This is very good meal for any size family since you can easily add to it. We serve this with rye bread which completes the meal.

We like the potatoes very soft and the cabbage a little stiff yet. This is a matter of individual taste, and that's why the cooking time is not set.
