Tofu Spinach Stuffed Sweet Potatoes

what you need
  • 4 large sweet potatoes
  • 1 Tbsp. olive oil
  • 2 minced garlic cloves
  • Honey
  • 1 med. onion
  • 1 tsp. fresh rosemary, finely chopped
  • 1 tsp. salt
  • 1/2 tsp. red pepper flakes
  • 2 1/2 cups spinach, thinly sliced
  • 4 ounces firm tofu, cut into 1/2 in. cubes

Preheat oven to 375°F. Wrap sweet potatoes in foil and let bake for 45 min-1 hour or until soft. When sweet potatoes are cool, cut off top quarter of each sweet potato. Scoop out flesh and reserve, leaving a 1/2 in. thick shell.

Take 1/2 of flesh and mash. Heat oil over medium heat and add garlic, honey, onions, rosemary, salt and pepper flakes. Cook for 3 min., stirring occasionally. Add spinach and cook until spinach has wilted. Stir in mashed sweet potatoes, tofu and 1/4 cup of water. Cook until filling is heated through.

Place sweet potatoes with foil on a baking sheet. Spoon filling into shells. Cover sweet potatoes with foil and bake until heated through - about 30 min.
