what you need
- 3 eggs
- 2 large very ripe bananas
- 1/2 cup baker’s sugar
- 1-1/2 cups dark brown sugar
- 1 tsp. each cinnamon and allspice
- 1/3 tsp. fresh ground nutmeg
- 1/4 tsp. clove, ground (optional)
- 1 cup olive oil or canola oil
- 2 cups self-rising flour
- 1 cup pecans
make it
Put eggs, bananas, sugars and spices into bowl of Kitchen Aid (or similar mixer) and beat until smooth. Add oil, mix well. Then add flour and pecans. Mix until flour is blended and pecans are broken up.
Pour into 2 greased 4x8 inch loaf pans.
Bake for 50 to 55 minutes at 350 degrees F (325 degrees F on convection bake) or until a toothpick inserted in the center of each loaf comes out clean. Cool for about 30 minutes and remove from pans to wire rack.
Notes
If bananas are very large, add a small amount of additional flour to adjust consistency of batter.
You may also bake this in a bundt pan just adjust your timing.
