Tropical Fruit Cake

what you need
  • Cake:
  • 1 box yellow cake mix
  • 1/2 cup fat-free egg substitute or 4 eggs
  • 1/2 cup applesauce
  • 1 can (11 oz.) mandarin oranges, undrained
  • Topping:
  • 1 tub (9 oz.) Cool Whip Free
  • 1 can (20 oz.) crushed pineapple, undrained
  • 1 small box fat-free sugar-free vanilla instant pudding
  • 1/2 cup flaked coconut
make it
Preheat oven to 350 degrees F. Grease a 9 x 13 inch cake pan. Mix cake ingredients on medium speed in electric mixer for three minutes. Pour into greased pan and bake for 25 minutes. Cool.

Mix topping ingredients together and spread on cooled cake. Sprinkle with coconut.
Keep cake refrigerated.
