Crock-Pot Meatballs

what you need
  • 2.5 lb. hamburger
  • 1 envelope beefy mushroom dry soup mix
  • 2 eggs
  • 1 box cornbread stuffing mix
  • 1/2 cup water
  • 1 can mushrooms
  • 3 cans cream of mushroom soup
make it
Mix hamburger, dry soup mix, eggs, stuffing mix and water. You may not need all the water, or you may need more, you be the judge.

After mixing ingredients, make into 1 inch balls. Brown meatballs. After meatballs are browned put into crock-pot. Add mushrooms and 3 cans of cream of mushroom soup and 1 can of water. Cover and set on high.

Cook at 4 to 6 hours; turn down to low last half hour of cooking.
Notes
I usually double this recipe; I make half that day and freeze the other half of meatballs after browning. When I don't have time to cook, I can start the meatballs around noon and forget them until dinner time. I usually serve them with either noodles or rice, but they're great with mashed potatoes or by themselves.

Rated  by Gary on 1/15/2004 I'm not a big mushroom fan, so I omitted the can of mushrooms and it still turned out great. I did have to add another 1/4 cup water, but this is one my family really enjoys.
