Vegan Greek Salad with Tofu and Olives

what you need
  • For the dressing:
  • 1/4 cup olive oil
  • 2 tablespoons white vinegar
  • 1 teaspoon salt
  • 1 teaspoon basil
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon oregano
  • For the Salad:
  • 1 pound tofu, cut into cubes
  • 3 fresh tomatoes, cored and cut into wedges
  • 3 cucumbers, thinly slivered
  • 1/2 large red onion, chopped
  • 1/2 cup black olives
  • 1 head romaine lettuce, washed and dried
make it
1. Mix dressing ingredients together and pour over the tofu. Marinate for at least 1 hour.

2. Add tomatoes, cucumbers, onion, and olives to the tofu. Toss.

3. Serve on the romaine lettuce.
