Vegan Mediterranean Rice Salad

what you need
  • 3 cups cooked brown rice
  • 1 green pepper, chopped
  • 1 cup green beans cut in small pieces
  • 1 cucumber, cut into chunks
  • 3 roma tomatoes, cut into large chunks
  • 1/2 cup fresh basil leaves, sliced
  • 1 tablespoon mustard
  • 1/2 cup rice vinegar
  • Juice of 1 lemon
  • 1 tablespoon olive oil
  • 1/2 tablespoon dried parsley flakes
  • Salt and pepper to taste
make it
1. Mix rice, pepper, green beans, cucumber, tomato, and basil in a large bowl.

2. Stir together mustard, rice mixture, vinegar, lemon juice, olive oil, and parsley. Pour over the salad and toss to mix.

3. Season with salt and pepper, toss, and serve.
